As I mentioned in my earlier posts, this is the first Christmas that Matt and I will be celebrating without our families. I am currently 39 weeks pregnant and will not be flying for obvious reasons. To tell you the truth, I was really looking towards celebrating Christmas just the two of us…well, three 😉 This will be baby bump’s first Christmas! We still did not settle on a name and will be waiting to meet our little girl first to make a final decision on a name.
The weather could not have been more perfect for a Christmas day with lots of snow and winter sun. Before diving into all the cooking and later eating, Matt and I walked for a very long time around Denver and admired Christmas lights and decorations.
Afterwards, we prepared a feast for our Christmas dinner. Here is what was on the menu:
- Arugula-Pear-Dates-Blue Cheese Salad with Homemade Apple Vinaigrette and Candied Pecans
- Locally Raised Colorado Lamb with Rosemary and Thyme
- Rice with Fennel, Leeks and Walnuts
- Winter Vegetables with Molasses Sauce
- German Cake
Everything was made from scratch by us with love.
Frying leeks and fennel for a rice side dish.
Getting winter vegetables ready for roasting. Carrots, brussel sprouts and turnips.
Homemade apple vinaigrette dressing.
And finally, after all the preparations the table is set.
Locally raised Colorado lamb was to die for. I am so lucky to have an opportunity to live in Denver and to taste all their local farms produce and meats/poultry.
Christmas dinner and baby bump’s first Christmas were a success. Now let’s hope baby girl makes an appearance soon.
